8 Rice Paper (hint I used 16cm round)
16 small Prawns, cooked
1 cup Bean Sprouts
¼ Red Cabbage, finely shredded
1 Carrot, julienned
Peanut Sauce
1/3 cup Peanut Butter
2 tbsp Tamari
1/3 cup Water
1 Garlic Clove, minced
1 tsp Lemongrass, finely chopped
Juice of ½ a Lime
½ a small Chilli, optional garnish

Prepare rice paper as per packet instructions, placing all filling ingredients and rolling.
Blitz peanut sauce ingredients in a blender until combined.
Serve as a dipping sauce alongside rolls and garnish with chilli with desired.
