Basil, Toasted Pine Nut & Spinach Pesto
Serves: 3-4 as a dip 2 as pasta sauce

1 cup of basil leaves
1 cup of spinach leaves
⅓ cup of extra virgin olive oil
1 large garlic clove, crushed
⅓ cup of grated parmesan cheese
⅓ cup of toasted pine nuts
Juice of 1 lemon
Salt & pepper to taste
Optional: chilli flakes

Heat a small frypan over medium heat. Add the pine nuts and cook until golden. Don’t forget to shake the pine nuts regularly to prevent burning. Set aside
Add the basil, spinach, olive oil, parmesan cheese, garlic, lemon juice and toasted pine-nuts to a high speed blender or food processor. Blitz to your desired consistency
Add salt, pepper and chilli flakes to your liking
Enjoy on toast, as a dip with your favourite crackers or stirred through your favourite pasta
