Best Ever Banana Bread
Serves: 8-10 Slices

3 ripe bananas, mashed + 1 for topping, halved
1 + ¾ cup wholemeal flour
⅓ cup extra virgin olive oil
½ cup raw coconut sugar
1 tsp baking soda
¼ cup natural yoghurt
1 tsp vanilla extract
1 tsp of cinnamon
2 eggs
Optional add ins: nuts, chocolate chips, dried fruit, nut butter, shredded coconut

Preheat the oven to 160 degrees
Line a deep loaf tin with baking paper, set aside
In a large mixing bowl, whisk together the olive oil and coconut sugar until a rich paste has formed
Add the eggs, mashed banana and yoghurt to the bowl and thoroughly combine
Stir through the baking soda, vanilla extract and cinnamon
Lastly, fold through the flour and any additional add-ins you wish to include
Pour the batter into your loaf tin and top with the two banana halves
Place into the oven for approximately 60 minutes or until an inserted skewer comes out clean.
Allow the bread to cool completely before slicing
