1/2 Cauli Head, roughly chopped
Extra Virgin Olive Oil, drizzled
1/2 Red Onion, diced
1 Garlic Clove, roughly chopped
100g Pulse Pasta
1 cup Coconut Cream
1/2 cup Water
1/4 cup Nutritional Yeast
1/4 cup Cashews, roughly chopped
1 tsp Salt
1/4 tsp Pepper
Parsley, to serve
Steam cauliflower until softened, approximately 7–10 minutes.
Meanwhile, heat oil in a small frying pan.
Add onion and garlic and sauté until softened, approximately 2 minutes.
Cook pasta as per packet instructions.
Add steamed cauliflower and remaining ingredients to a blender and blitz until silky smooth (add more water if necessary).
Return drained pasta to pot and stir though sauce and parsley. Serve once heated through.
