Chewy Choc Chip Blondies

Ingredients:

1 cup (250g) nut butter (e.g. peanut or almond)

¾ cup (150g) brown sugar

¼ cup (60g) maple syrup

1 tsp vanilla extract

1 egg

2 tbsp milk

2 ¼ cups (280g) plain flour

1/4 tsp bicarbonate powder

1/4 tsp baking powder

Pinch of sea salt

¾ cup (150g) chocolate chips

Method:

  1. Preheat oven to 160°C and line a square tin with baking paper. In a large bowl, whisk together nut butter, sugar, maple syrup, vanilla, egg and milk.

  2. Add the flour, bicarbonate powder, baking powder, salt and chocolate chips, then mix well to combine. You may need to use your hands to ensure everything is well-combined, as the dough is quite stiff.

  3. Transfer the dough to your baking tin and press down. Bake for 25-30 minutes, or until firm to touch. Leave to cool for 5 minutes, then remove from the tray and let cool for another 10-15 minutes on a wire rack before slicing.
