Chicken and Avocado Sourdough Sandwich

2 sourdough ciabatta rolls or 4 slices of multigrain sourdough bread
1 medium sized chicken breast (175-200g)
½ large avocado
¼ cup of greek yoghurt
1 tsp of fresh lemon juice
1 small stalk of celery, finely diced
2 tbsp of parsley
1/3rd cup of alfalfa sprouts
2 tbsp of dijon or wholegrain mustard
Salt and pepper to taste

Poach the chicken breast in boiling water. Once it has cooked through (this should take approx 20 minutes), place onto a chopping board and shred with two forks. Set aside until cool
Prepare the coating by combining the avocado, greek yoghurt, lemon juice, celery, parsley and salt and pepper in a bowl.
Once the chicken has cooled, add it into the avocado and yoghurt mix and coat generously, set aside
Lightly toast your baguette or sliced bread and spread 1 tbsp of mustard evenly on each sandwich. Fill with the chicken mixture and alfalfa sprouts and cut to enjoy
