Chickpea Salad Sandwich

1 ½ cup canned chickpeas
¼ red onion, finely diced
2 stalks celery, finely sliced
2 tbsp Greek yoghurt
2 tsp lemon juice
Salt and pepper, to taste
4 lettuce pieces
4 slices wholemeal bread

Drain and rinse chickpeas, then transfer to a large bowl and mash a fork. Add the onion, celery, lemon juice and yoghurt, then season with salt and pepper.
Spoon the chickpea mixture onto two slices of bread, then top with lettuce and the second slice of bread.
