Choc Chunk and Walnut Cookies

Serves: 10-12 cookies

1 cup of wholemeal flour
¾ cup of almond meal
10 pitted dates, medjool work best due to the texture
1 cup of milk of your choice
2 tbsp of olive oil
1 tbsp of coconut sugar or sweetener of your choice
1 tsp of vanilla extract
Pinch of cinnamon
⅓ cup of good quality chocolate chips
¼ cup of chopped walnuts
2 tsp of baking powder

Preheat your oven to 180 degrees celsius
Line an oven-proof baking tray with baking paper
Combine the flour, almond meal and dates in a high speed blender. Blend well to ensure the dates are well dispersed amongst the mixture
Add the remaining ingredients (excluding the chocolate chips and walnuts) and blitz until a sticky dough has formed
Fold through the chocolate chips and chopped walnuts
Roll the mixture into balls and place them onto your pre-lined baking tray. Flatten each ball well with the back of a large spoon
Bake the cookies for 10-12 minutes or until golden on the outside
