Choc Oat Bliss Balls

1 cup (80g) rolled or quick oats
¼ cut coconut oil
⅓ cup nut butter* of choice
½ cup (50g) walnuts
⅓ cup (40g) pumpkin seeds
⅓ cup (40g) sunflower seeds
1 tbsp (10g) chia seeds
¼ cup (20g) shredded coconut
2 tbsp (15g) cacao powder
1 tsp vanilla extract
*nut butters can vary in consistency, so if your mix looks a little dry, add an extra tablespoon of nut butter at a time until the mix can be rolled into a ball.

Place all ingredients into a food processor and process until everything is combined.
Roll the mixture into 12 equal-sized balls,, then store in an airtight container in the fridge for up to one week.
