Chunky Coconutty Granola

2 cups of mixed nuts, we used almonds, hazelnuts and Brazil nuts.
1 cup of mixed seeds, I have used sunflower and pumpkin seeds
1 cup of coconut flakes,
1 tsp of cinnamon,
1 tbsp of runny tahini
1 tbsp of olive oil

Mix altogether in a large bowl, making sure to coat everything in the tahini and olive oil.
Spread out in a thin layer on a baking tray, use two trays if it looks a little full.
Bake in oven on 180° for 20 minutes stirring regularly.
Ovens can vary, so keep a close watch on your granola, to make sure it ends up nice and golden and not burnt.
