4 tbsp milk of choice
1½ tbsp maple syrup, plus extra to serve
½ tsp vanilla extract
Pinch of salt
4 slices bread
Olive oil spray
¾ cups (200g) vanilla yoghurt, to serve
2 cups (200g) fresh berries, to serve

To a shallow bowl, add the egg, milk, maple syrup, vanilla extract and a pinch of salt. Whisk vigorously to combine, then add the bread slices, one at a time, and soak on both sides.
Heat a large non-stick pan over medium-high heat. Once hot, spray with olive oil and cook each piece of bread for 2-3 minutes on each side.
Serve with yoghurt and fresh berries.
