Coconut Chia Pudding with Berry Compote

Chia Pudding Base
120mls coconut milk
2 tbsp chia seeds
¼ tsp pure vanilla extract
Berry Compote
¼ cup frozen blueberries
¼ cup frozen raspberries
1 tbsp maple syrup
½ tsp vanilla extract
¼ tsp ground cinnamon

Place all chia pudding ingredients into a bowl or glass and whisk to combine. Cover and refrigerate overnight (or at least 5 hours).
For the compote, place all ingredients in a small saucepan and bring to medium heat. Once small bubbles appear, reduce heat and gently mash berries with a wooden spoon. Continue cooking over low heat for 10 minutes, then let cool, place in a container and store in the fridge until the chia pudding is set.
To serve, spoon the berry compote over the chia pudding and add your preferred toppings.
