Crunchy Peanut Butter Bars

Serves: 10-12 bars

Ingredients:

1 cup of of rolled oats

1/3rd cup of honey or *maple syrup 

1 cup of natural smooth peanut butter

2/3rd cup of puffed rice 

Optional: 1/3rd cup of activated buckwheat 

90g of melting chocolate

Method:

  1. Blitz the oats in a high speed blender or food processor to create oat flour 

  2. In a large bowl, combine the oat flour, peanut butter, liquid sweetener of your choice, puffed rice and activated buckwheat.

  3. Evenly press the mixture into a lined baking tray and pop into the freezer for 30 minutes 

  4. Melt the chocolate in the microwave, remembering to stir every 20-30 seconds to avoid overheating 

  5. Remove the slice from the freezer and drizzle with melted chocolate

  6. Place back into the freezer for 30 minutes, and then slice into bars

  7. Store in an airtight container in the fridge or freezer for a firmer fudge-like texture..
