Gnocchi Bake

1 jar of tomato passata
1 tbsp of olive oil
1 packet of your favourite gnocchi, any flavour or variety will work for this recipe
1 cup of baby spinach
¼ cup of olives
1 red capsicum, finely chopped
1 red onion, finely chopped
½ cup sliced mushrooms
2 tbsp of dried italian herbs
1/2 cup of shredded cheese or ¼ cup of feta cheese
Optional: to add an extra hit of protein to the gnocchi, simply add 2 x 90g can of tuna OR 1 can of rinsed chickpeas OR 200g of shredded chicken

Preheat your oven to 180 degrees celsius
Boil a medium sized saucepan in preparation for your gnocchi
Grease a large baking tray with 1 tbsp of olive oil. Add all of the ingredients (excluding the gnocchi, tomato passata and cheese) and bake for 20 minutes. In the meantime, cook gnocchi according to packet instructions
Remove the tray from the oven and add the remaining ingredients (cooked gnocchi, tomato passata, and protein source of your choice). Top with your favourite cheese and place back into the oven for 20 minutes
Serve immediately
