Grab’n’go Raw Granola Bars
Serves: 8 large bars or 16 bite-sized bars

¼ cup of dried apples, finely chopped
1.5 cups of rolled oats
1 cup of rice puffs
⅓ cup of extra virgin olive oil
¼ cup roast almonds, chopped
2 tbsp of pepita seeds
⅓ cup of honey or your favourite liquid sweetener
1 tsp of vanilla extract
1 tsp of cinnamon

Line a medium sized baking tray with baking paper
In a large bowl, combine all of the ingredients. Mix well
If you wish, you can toast the rolled oats , nuts & seeds in the oven for 15 minutes beforehand. This will give the bars a slightly ‘nuttier’ flavour
Place the bars into the freezer for 1-2 hours or until completely firm. Remove from the freezer and slice to your desired shape and size
We recommend storing the bars in the freezer to prevent the oil from melting
Extra tip: Crumble the bars over your favourite greek style yoghurt and serve with fresh berries
