Greens and Grains Breakfast Bowl

1 slice of multigrain sourdough toast
¼ cup of avocado
1 tsp of extra virgin olive oil
1 clove of garlic, minced
½ cup of cooked combined quinoa and brown rice
1 small bunch OR ½ large bunch of broccolini
½ cup of kale, stems removed
3 tablespoons of home-made Hummus [blitz together 1 can of drained chickpeas, 3 tbsp of tahini, 3 tbsp of EVOO, juice of 1 lemon, 2 garlic cloves, ½ tsp of cumin and salt and pepper]
Salt and pepper to taste
Poached Egg (optional)
Chilli flakes (optional)

Heat olive oil in a frying pan over medium heat. Saute garlic
Lightly fry the broccolini and kale for 2-3 minutes or until it reaches your desired consistency, set aside
Assemble your nourish bowl with the toasted sourdough, avocado, hummus, quinoa/brown rice and a poached egg if you wish
Finish with fresh lemon juice, salt and pepper to taste and chilli flakes (optional)
