Healthy Berry Crumble

Ingredients:

1/2 cup of nuts, we used pecan nuts.

1/4 of a cup of seeds, I have used pumpkin and sunflower seeds

1/2 cup of oats

1/4 cup of desiccated or shredded coconut

1 tablespoon of olive oil

1 tablespoon of maple syrup,

1 tablespoon of runny peanut butter 

1 1/2 cups of mixed frozen berries.

Method:

  1. Mix all of the crumble topping in a bowl, making sure to coat everything in the peanut butter and olive oil.

  2. Pour frozen berries into a small oiled baking dish.

  3. Top with crumble mixture.

  4. Bake in oven on 180° for 10 to 15 minutes depending. Keep an eye on your crumble so that it ends up nice and golden on top, not burnt.

  5. Serve with your choice of Greek yoghurt, coconut, yoghurt, or ice cream
