Healthy Tofu Satay Noodles

Satay Sauce:
2 tbs soy sauce/tamari
2 tsp curry powder
1/4 cup peanut butter
2 tbs honey
1 cup lite coconut milk
1/2 cup water
Noodles:
2 tsp olive oil
450g firm tofu, diced
1 head broccoli, chopped
200g flat rice noodles

Combine all sauce ingredients in a bowl, set aside.
Heat the oil in a pan on medium heat.
Add the diced tofu & broccoli florets.
Cook for 5 minutes or until browned.
Add the sauce, cover & simmer for 10 mins.
Prep the noodles as per packet instructions.
Add the noodles & simmer for 3 mins. Serve!
