Healthy Tofu Satay Noodles

Ingredients:

Satay Sauce:
2 tbs soy sauce/tamari
2 tsp curry powder
1/4 cup peanut butter
2 tbs honey
1 cup lite coconut milk
1/2 cup water

Noodles:
2 tsp olive oil
450g firm tofu, diced
1 head broccoli, chopped
200g flat rice noodles

Method:

  1. Combine all sauce ingredients in a bowl, set aside.

  2. Heat the oil in a pan on medium heat.

  3. Add the diced tofu & broccoli florets.

  4. Cook for 5 minutes or until browned.

  5. Add the sauce, cover & simmer for 10 mins.

  6. Prep the noodles as per packet instructions.

  7. Add the noodles & simmer for 3 mins. Serve!
