Honey and Apple Cider Vinegar Glazed Salmon Tray Bake

Under 30 Minutes

Ingredients:

2 x salmon fillets

2 tbsp apple cider vinegar

1 tbsp honey 

1 tbsp extra virgin olive oil

3 tsp wholegrain mustard 

1 garlic clove, minced 

1 x bunch broccolini 

1 x bunch asparagus 

1 cup snow peas 

1 red chilli, finely sliced 

4 spring onions, finely sliced

Method:

  1. Preheat oven to 180°C and line a baking tray. In a small bowl, combine apple cider vinegar, honey, olive oil, mustard and minced garlic. 

  2. Place the broccolini, asparagus and snow peas in a large baking dish and pour over half the sauce. Toss gently to combine.

  3. Nestle the salmon amongst the vegetables and pour over the remaining sauce. Season with salt and pepper, then cook for 15-20 minutes, or until the salmon reaches your preferred doneness.

  4. Once cooked, divide salmon and vegetables between two plates and garnish with red chilli and spring onions.
