Italian Style One Tray Meatball Bake

Serves: 20 small-medium sized meatballs

Serves: 20 small-medium sized meatballs

Ingredients:

  • 500g of pork & veal mince

  • 1 brown onion, very finely chopped 

  • 2 cloves of garlic, minced 

  • 1 tbsp of olive oil

  • ¼ cup of parsley, finely chopped

  • 1/4 cup of parmesan cheese

  • 1 heaped tbsp of fennel seeds

  • 1 egg, whisked

  • ½ cup of breadcrumbs, use gluten free if required 

  • 1 jar of tomato passata

  • 1 400g can crushed tomatoes 

  • ¼ cup milk of your choice 

  • 250g of shredded mozzarella

Method:

  1. Preheat your oven to 180 degrees celsius 

  2. In a large mixing bowl, thoroughly combine the onion, garlic, mince, parsley, parmesan cheese, fennel seeds, whisked egg, breadcrumbs and milk. 

  3. Meanwhile, grease a large oven-proof dish with olive oil. 

  4. Roll 1tbsp worth of mince into small-medium sized meatballs and place onto the baking tray 

  5. Once all the mixture has been rolled into balls, top with tomato passata, crushed tomato and shredded mozzarella

  6. Cover the tray with foil and bake for 20 minutes. Remove the foil and bake for an additional 20 minutes

  7. Serve with your favourite greens and grains. We love sauteed broccolini and mini macaroni pasta
