Lemon & Blueberry Overnight Chia Oats

Serves: 1 (strongly recommended to double or quadruple recipe as a breakfast meal prep)

Dairy Free, Vegetarian

Ingredients:

1/3 cup Rolled Oats

¾ cup Milk of Choice

2 tbsp Chia Seeds 

1 tsp Honey

¼ cup Blueberries

1 tbsp Yoghurt of Choice

1 tsp Lemon Juice


To Serve:

Fresh Blueberries 

Lemon Zest


Method:

  1. Combine rolled oats, milk, chia seeds and honey in a jar. Seal and leave to set in fridge overnight. 

  2. Blitz blueberries, yoghurt and lemon juice in a blender until just combined (alternatively just combine in a bowl). Add to a bowl, seal and leave to set in fridge overnight.

  3. Once the chia oat jar has set, layer the blueberry mixture on top of the chia mixture.

  4. Top with additional blueberries and lemon zest. .
