Lentil Fritters with Tzatziki Dip

1 x 400g can Lentils, drained
½ Cauliflower Head, roughly chopped
1 Egg
1 Garlic Clove, minced
1 cup Flour
¼ cup Milk of Choice
1 tsp Baking Powder
1 tsp Salt
1 tsp Ground Turmeric
1 tsp Paprika
Pinch Pepper
1 Carrot, grated
½ Red Onion, roughly chopped
Extra Virgin Olive Oil, drizzled
Coconut Tzatziki Dip
1 cup Coconut Yoghurt
½ Cucumber, grated
½ Lemon, juiced
1 Garlic Clove, minced
2 tsp Fresh Dill, finely chopped
½ tsp Dried Oregano

Blitz lentils, cauliflower, egg, garlic, flour, garlic, milk, baking powder, salt, turmeric, paprika and pepper in a food processor/blender until combined.
Mix through carrot and red onion.
Heat a large frying pan and drizzle with oil.
Using 2 heaped tablespoon of batter, cook fritters until golden, approximately 5 minutes each side (add more oil when you flip, if you want the opposite side crispy).
Meanwhile, combine all coconut tzatziki dip ingredients in a bowl and set aside.
Top golden fritters with tzatziki and enjoy!
