Extra Virgin Olive Oil, drizzled
½ Red Onion
250g Grass-Fed Beef Mince Meat
½ tsp Garlic Powder
2 tsp Cumin
2 tsp Paprika
½ tsp Cayenne Pepper
½ tsp Salt
1 Carrot, grated
1 Tomato, diced keeping juice
¼ Red Onion, sliced
¼ Red Capsicum, diced
½ tsp Lime Juice
Chilli, to taste (if you like it hot!)
1 Large Iceberg Lettuce (lettuce leaves separated)
60 grams Goats Fetta (2 heaped tbsp)
Sauté onion in oil in a medium frying pan on medium heat until softened.
Add mince and cook until browned, add spices and stir through.
Remove from heat and stir through carrot.
Prepare salsa by combining all ingredients in a bowl.
Serve filling in a lettuce cup, top with salsa & fetta.
