Mixed Vegetable Frittata

3-4 cups of your favourite vegetables, we use onion, mushrooms, spinach, capsicum, potato, tomatoes and zucchini but you can use whatever you please. Cut potatoes, sweet potatoes and other starchy vegetables into small cubes to ensure they cook
1 cup of shredded cheese
1 tbsp of dried italian herbs
Salt and pepper to taste

Preheat your oven to 180 degrees celsius
Line a small-medium sized baking dish with baking paper, set aside
Finely chop your 3-4 cups of vegetables and place them onto the baking tray with shredded cheese
Whisk together the eggs and pour over the vegetables. It doesn’t matter if the vegetables aren’t entirely covered by the egg
Finish with salt, pepper, italian herbs and chilli flakes (optional)
Place the slice into the oven for 45 minutes or until golden
Slice and enjoy
