Nanny Annie's Banana Pancake

Gluten Free, Dairy Free

Ingredients:

1 mashed banana 

2-3 eggs 

Tbs of chia seeds 

Tbs psyllium husk 

Tbs Honey 

Pinch of cinnamon 


To serve: 

Your choice of berries

Coconut yoghurt 


Optional: extra honey and granola on top  

Method:

  1. Mash the banana in a bowl

  2. Whisk eggs seperately

  3. Combine eggs to the banana mix

  4. Add chia seeds, psyllium husk, cinnamon, honey and mix well

  5. Heat olive oil in a pan on medium heat and pour in mix to your desired pancake size

  6. Cook until golden brown then flip to other side. Approx 3-5 mins either side

  7. Add your choice of yoghurt, berries, granola and extra honey.

  8. Enjoy!
