Nanny Annie's Banana Pancake

1 mashed banana
2-3 eggs
Tbs of chia seeds
Tbs psyllium husk
Tbs Honey
Pinch of cinnamon
To serve:
Your choice of berries
Coconut yoghurt
Optional: extra honey and granola on top

Mash the banana in a bowl
Whisk eggs seperately
Combine eggs to the banana mix
Add chia seeds, psyllium husk, cinnamon, honey and mix well
Heat olive oil in a pan on medium heat and pour in mix to your desired pancake size
Cook until golden brown then flip to other side. Approx 3-5 mins either side
Add your choice of yoghurt, berries, granola and extra honey.
