Nutrient Rich Chicken Nourish Bowl

Ingredients:

2 small chicken breasts 

2 cups of silverbeet, stalks removed and diced 

2 tbsp of pepita seeds

8 small button mushrooms 

1 medium sized sweet potato

2 tbsp of olive oil 

1 tbsp of smokey paprika 

1 tsp of minced garlic 

1 tbsp of dried italian herbs 

3 tbsp of Our Pilates hummus 

Salt and pepper to taste

Fresh lemon juice

Method:

  1. Prepare the chicken by seasoning both sides with dried italian herbs, salt and pepper

  2. Preheat your oven to 200 degrees celsius 

  3. Line a baking sheet with baking paper. Chop the sweet potato into cubes and place onto the baking tray. Season with salt, smokey paprika, garlic powder and a drizzle of olive oil. Place into the oven for 30 minutes 

  4. In the meantime, heat 1 tbsp of olive oil in a medium sized frying pan. Cook the chicken until golden on the outside and cooked through

  5. Remove the chicken and allow to rest for 5 minutes before slicing 

  6. In the same frying pan, lightly saute the silverbeet and button mushrooms. You can leave the mushrooms whole or slice them finely

  7. Assemble your nourish bowls with the hummus, chicken breast, sweet potato, silverbeet, mushrooms and pumpkin seeds. Serve with a drizzle of fresh lemon juice
