One Tray Teriyaki Salmon with Soba Noodles

Ingredients:

2 piece of atlantic salmon, skin on

2 tbsp of teriyaki sauce, you can of course make your own teriyaki sauce from scratch if you prefer

2 tsp of sesame seeds

1 bunch of broccolini, chopped

1 zucchini, diced

1 brown onion, diced 

100g of soba noodles or noodles of your choice 

1 tsp of sesame oil 

1 tsp of soy sauce (sub tamari for gluten free)

Method:

  1. Preheat your oven to 180 degrees celsius 

  2. Line a small baking dish with baking paper. Place the salmon skin side down onto the paper and spoon over the teriyaki sauce 

  3. Top each piece of salmon with a generous sprinkle of sesame seeds. Allow to sit for 10-15 minutes to allow the sauce to lightly submerge into the flesh 

  4. Place the salmon into the oven for 12 minutes or until cooked to your liking 

  5. In a large wok, heat 1 tsp of sesame oil, add the brown onion, zucchini and broccoli. Fry for 3-4 minutes or until the vegetables start to soften 

  6. Whilst the vegetables are cooking, prepare the soba noodles according to packet instructions. This should only take a few minutes

  7. Once the noodles are cooked, at them to the frying pan with the vegetables and combine with the soy sauce 

  8. Serve the soba noodles, vegetables and salmon all together and enjoy
