One Tray Veggie Bake with Lemon & Garlic Salmon

Ingredients:

3 Garlic Clove, minced

2 tbsp Yoghurt

2 tsp Lemon Juice

1 tsp Dill

2 x Salmon Fillets, skin on

½ Lemon, sliced into rounds

½ Red Onion, cut into wedges

6 Asparagus, trimmed

½ Capsicum, any colour 

¼ Cauliflower Head, cut into florets

Extra Virgin Olive Oil, drizzledSalt & Pepper, sprinkled

Method:

  1. Preheat oven to 180 degrees and prepare a baking tray. 

  2. Combine garlic, yoghurt, lemon juice and dill in a bowl. 

  3. Place salmon on baking tray and top with the lemon garlic mixture. Place lemon rounds on top of the mixture.

  4. Scatter remaining vegetables around the salmon, drizzle with oil and season with salt and pepper. 

  5. Bake for 18-20 minutes or until salmon is tender.
