Passionfruit and Apple Overnight Oats

Ingredients

  • 1 granny smith apple, finely chopped 

  • Pulp of 1 passionfruit 

  • 1.5 cups of greek yoghurt 

  • ⅔ cup of rolled oats 

  • 2 tbsp of honey or liquid sweetener if your choice 

  • 1 tsp of cinnamon 

  • 2 tbsp of raisins, cranberries or your favourite dried fruit 

  • ⅓ cup of your favourite nuts and seeds, chopped. We love pecans, roast almonds and pumpkin seeds

  • Optional: milk of your choice for serving

Method:

  1. With this recipe, you can choose to layer the ingredients in a mason-style jar as per the image attached, or alternatively combine all of the ingredients in a large mixing bowl and serve as you please

  2. If you wish to layer the ingredients in a jar as displayed, follow instructions below 

  3. In a small mixing bowl, combine the rolled oats, cinnamon, mixed nuts and raisins. Place ¼ of the mixture at the bottom of each jar

  4. Top the muesli layer with greek yoghurt, diced apple, passionfruit pulp and a drizzle of honey. Repeat this process twice or until all of your ingredients have been utilised 

  5. Optional: add a dash of milk to each jar to further soak the muesli 

  6. Refrigerate overnight and enjoy
