Raspberry & Cherry Ripe Slice

Serves: 8-10 bars

Serves: 8-10 bars

Ingredients:

1 cup of frozen pitted cherries, thawed

1 cup of frozen raspberries, thawed

2 tbsp of chia seeds

2 tbsp of liquid sweetener, I used honey

2 cups of shredded coconut

1 tbsp of coconut oil

1/4 cup of dried cranberries

100g of your favourite chocolate

Coconut chips to serve

Method:

  1. Blitz all the ingredients in a high speed food processor (excluding the chocolate of course).

  2. Line a baking tray with baking paper and press the cherry mix into it firmly. Set aside in the fridge while you prepare the chocolate.

  3. Melt the chocolate and pour it evenly over the slice

  4. Top the slice with coconut chips and place into the freezer for approximately 1 hour

  5. Slice into bars and serve with fresh raspberries
