Slow Cooked Pork & Cauliflower Bolognese

1 kg of lean pork mince
½ head of cauliflower
¼ cup of tomato paste
700g of tomato passata
1 zucchini, sliced
3 stalks of celery, diced
2 medium carrots, diced
1L of stock
1 tbsp of fennel seeds
1 brown onion, diced
2 tbsp of extra virgin olive oil
2 cloves of garlic
Salt & pepper to taste
Optional: Chilli flakes
Optional: Parmesan cheese for serving
500g of your favourite pasta, we used linguine (sub for gluten-free if needed)

Add the olive oil to a large saucepan (alternatively, you can add it straight into the base of your slow cooker if it is detachable) and place it over medium heat.
Once the oil is heated, saute the onion, garlic, carrots, celery and zucchini for 4-5 minutes
Add the pork mince and brown for 3-4 minutes. Place the remaining ingredients into the pot (excluding the pasta) and slow cook for 6-8 hours.
15 minutes prior to serving, prepare your pasta according to packet directions
Serve the cooked pasta with the sauce and top with parmesan cheese and chilli flakes
