Smoked Salmon Breakfast Omelette

2 eggs
2 tbsp milk
2 tsp chives, finely chopped
Pinch of salt and cracked black pepper
1 tbsp butter
2 tbsp feta or goat cheese
50g smoked salmon
1/4 avocado
Dill, to garnish

Crack eggs into a bowl and add milk and chives. Season with salt and pepper, then whisk to combine.
Heat butter in a pan over low-medium heat. Add the egg mixture and tilt the pan to ensure the eggs are evenly spread.
When the omelette begins to set, flip and cook for another 1-2 minutes, or until cooked.
Transfer omelette to a plate and serve with feta or goat cheese, smoked salmon, avocado and dill.
