Almond Butter Hemp Protein Bars

Simple swaps/additions:

-Rolled oats for brown rice flakes or raw buckwheat groats.

-Hemp seeds for pumpkin seeds, walnuts, almonds or sunflower seeds. 

-Almond butter for peanut butter.

-Honey for maple syrup. 

-Low FODMAP - directly swap the honey for maple syrup. 

Recipe by Two Raw Sisters

Ingredients: 

  • 1 cup rolled oats 

  • 1/2 cup hemp seeds

  • 1/2 cup almond butter

  • 2 tbsp chia seeds

  • 1/4 cup honey

  • 2 tbsp water, more if needed

  • ½ tsp sea salt

  • 50g dark chocolate, roughly chopped 

  • 2 tbsp hemp seeds, to sprinkle on top

Method:

  1. Add the rolled oats and hemp seeds to a blender and blend until a fine flour is formed. 

  2. Add the almond butter, chia seeds, honey and sea salt. Blend until you have a smooth cookie dough texture. 

  3. Transfer the cookie dough into a bowl and add the dark chocolate. Mix until well combined.

  4. Line a loaf tin and press the dough evenly into the tin. Use the back of a spoon to smooth out the top.

  5. Top with a sprinkle of hemp seeds and place in the freezer to set for 30 minutes. 

  6. Once set, cut into bars and store in the freezer where they will keep in an airtight container for up to 3 months.
