Almond Butter Hemp Protein Bars

Simple swaps/additions:
-Rolled oats for brown rice flakes or raw buckwheat groats.
-Hemp seeds for pumpkin seeds, walnuts, almonds or sunflower seeds.
-Almond butter for peanut butter.
-Honey for maple syrup.
-Low FODMAP - directly swap the honey for maple syrup.

Ingredients: 
          
          Ingredients:
- 1 cup rolled oats 
- 1/2 cup hemp seeds 
- 1/2 cup almond butter 
- 2 tbsp chia seeds 
- 1/4 cup honey 
- 2 tbsp water, more if needed 
- ½ tsp sea salt 
- 50g dark chocolate, roughly chopped 
- 2 tbsp hemp seeds, to sprinkle on top 
Method:
          
          Method:
- Add the rolled oats and hemp seeds to a blender and blend until a fine flour is formed. 
- Add the almond butter, chia seeds, honey and sea salt. Blend until you have a smooth cookie dough texture. 
- Transfer the cookie dough into a bowl and add the dark chocolate. Mix until well combined. 
- Line a loaf tin and press the dough evenly into the tin. Use the back of a spoon to smooth out the top. 
- Top with a sprinkle of hemp seeds and place in the freezer to set for 30 minutes. 
- Once set, cut into bars and store in the freezer where they will keep in an airtight container for up to 3 months.
