Almond & Pecan Granola Bars

Serves: 9 large 12 small

Prep Time: 10 mins
Setting time: 2 hours

Ingredients:

  • 1 cup rolled oats

  • ½ cup almonds

  • ½ cup pecans

  • ½ tsp cinnamon

  • ¼ cup honey

  • ¼ cup peanut butter

  • ¼ cup grass fed butter

  • Pinch of salt

Method:

  1. Line a baking dish with baking paper and set aside

  2. Roughly chop the almonds and pecans, adding them to a large bowl with the rolled oats, cinnamon, and salt

  3. In a small saucepan over a low heat, add the honey, butter, and peanut butter. Slowly melt these, stirring until well combined 

  4. Pour the wet mixture over the dry mixture and stir well

  5. Spoon the granola into the lined baking dish and cover with more baking paper. Take another small dish and press down firmly to compact, then remove the top layer of baking paper

  6. Transfer the dish to the freezer for two hours

  7. Once set, remove from the freezer and slice into shape

Tips:

Compressing the bars is essential to make sure they stay together well! Store the bars in the fridge for up to one week, or in the freezer for two months.
