Bable Thumbprint Muffins

3 overripe bananas, peeled and roughly chopped
2 cups almond meal
2 eggs
1 teaspoon apple-cider vinegar
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1⁄3 cup Berry Good Jam

Preheat the oven to 180C
To a bowl, add all the ingredients, except the Berry Good Jam, together and stir until well combined.
Add half of the mixture into a greased 12-hole muffin tin or silicone mould.
Add 1 teaspoon Berry Good jam to the top of each muffin then spoon in the remaining mixture to cover each portion so the jam is sandwiched between the muffin layers.
Add another 1⁄2 teaspoon or whatever is left of your Berry Good Jam to top each muffin off.
Bake in the oven for 20 minutes, or until a knife inserted in the middle of a muffin comes out clean.
Leave to cool for 10 minutes on a wire rack.
