Chocolate & Banana Muffins

Ingredients:

  • 1 cup spelt flour

  • 3/4 cup almond meal

  • 1/2 cup cacao powder

  • 2 ripe spotty bananas mashed

  • 2 eggs 

  • 1/2 cup milk

  • 1/2 cup olive oil

  • 1/2 cup chocolate chips

  • 2 TSP baking powder

  • 1/2 TSP bi carb

  • Pinch of salt

Method:

  1. Preheat the oven to 170 degrees and line a muffin tray with muffin papers

  2.  Take out a large bowl and add in all of the dry ingredients. Mix gently to combine

  3. In a smaller bowl, crack the eggs and whisk them lightly. Add in the banana and mash it well with a fork

  4. Add in the milk and olive oil. Stir well to combine

  5. Pour the wet mixture into the dry mixture and mix until there are no lumps of flour. Then stir through the chocolate chips

  6. Spoon the mixture into the muffin papers

  7. Bake for roughly 15 minutes, inserting a skewer into the centre - if it comes out clean, they are ready. 


Tips:

Over-ripe bananas are almost essential for this recipe as they add the sweetness these muffins need! If your bananas aren’t quite ripe enough - add ¼ cup of honey or maple syrup too
