Curried Chickpea & Broccoli Fried Rice

Ingredients:

½ Broccoli Head, roughly chopped

Extra Virgin Olive Oil, drizzled

½ Onion, diced

1 Garlic Clove, minced

200g Chickpeas, drained & rinsed

½ cup Peas

½ tsp Curry Powder

¼ Red Capsicum, diced

1 Carrot, julienned 

1 tbsp Tamari 

2 tsp Sesame Oil 

½ tbsp Black Sesame Seeds

Chilli Flakes, optional

Salt & Pepper, to taste

Method:

  1. Pulse broccoli head in a food processor until it resembles a fine rice consistency. Set aside. 

  2. Heat a medium frying pan, and drizzle oil.

  3. Sauté onion and garlic until softened.   

  4. Add chickpeas, peas and curry powder to pan and cook for two minutes. 

  5. Add red capsicum and carrot and cook for a further minute. 

  6. Add broccoli rice and tamari and cook until rice has softened. 

  7. Stir through sesame seeds and drizzle with sesame oil. 

  8. Serve, season and option to sprinkle with chilli flakes.
