One Pan Mediterranean Chicken Cacciatore

Ingredients:

2 large chicken breasts or 8 tenderloins 

½ red capsicum, finely chopped

½ yellow capsicum, finely chopped 

1 brown onion, finely chopped

2 garlic cloves, crushed

¼ cup pitted black olives 

2 large potatoes, chopped into cubes 

½ jar of tomato passata 

1 can of tinned tomatoes 

½ cup dry white wine (optional) - keep me in mind the alcohol diminishes with cooking time, however if you are cooking for children you may wish to leave this out

Basil leaves (to serve)

Method:

  1. Preheat your oven to 180 degrees 

  2. Place all of the ingredients in an oven proof dish. There is no real method to this, as long as your ingredients are evenly dispersed

  3. Bake for 30-40 minutes or until the chicken has cooked through and the dish is richly fragrant

  4. Serve as if or with a side of greens
