Super Greens Soup

Serves: 4

Ingredients:

  • 1.5 cups peas

  • 1 small head of broccoli 

  • 2 cups baby spinach 

  • 1 brown onion 

  • 2 garlic cloves

  • ¼ cup fresh parsley 

  • 2.5-3 cups water or bone broth 

  • 2 tbsp butter 

  • 1 tbsp olive oil 

  • Salt and pepper to taste 

  • 3 tbsp toasted pepitas to top

Method:

  1. Finely dice the onion and garlic 

  2. Remove the broccoli florets from the broccoli stalk 

  3. Preheat a medium sized pot over a medium - high heat and add in the olive oil 

  4. Once the pot is hot, add in the onion and garlic, seasoning with salt, and cook for 5-7 minutes until the onions have softened 

  5. Add in the broccoli and pour over one cup of water or broth. Allow the broccoli to cook for roughly 5 minutes

  6. Add in the peas, parsley and the rest of the liquid and cook for a further 5 minutes 

  7. Once the broccoli is soft, add in the spinach and allow it to wilt. You may need to add the extra half a cup of liquid, do so now 

  8. Add to a blender with the butter and salt and pepper and blend until smooth

  9. Top with toasted pepita seeds 

  • Serve with crispy skin chicken or fried tempeh
