Super Greens Soup

1.5 cups peas
1 small head of broccoli
2 cups baby spinach
1 brown onion
2 garlic cloves
¼ cup fresh parsley
2.5-3 cups water or bone broth
2 tbsp butter
1 tbsp olive oil
Salt and pepper to taste
3 tbsp toasted pepitas to top

Finely dice the onion and garlic
Remove the broccoli florets from the broccoli stalk
Preheat a medium sized pot over a medium - high heat and add in the olive oil
Once the pot is hot, add in the onion and garlic, seasoning with salt, and cook for 5-7 minutes until the onions have softened
Add in the broccoli and pour over one cup of water or broth. Allow the broccoli to cook for roughly 5 minutes
Add in the peas, parsley and the rest of the liquid and cook for a further 5 minutes
Once the broccoli is soft, add in the spinach and allow it to wilt. You may need to add the extra half a cup of liquid, do so now
Add to a blender with the butter and salt and pepper and blend until smooth
Top with toasted pepita seeds
Serve with crispy skin chicken or fried tempeh
