Sweet Potato, Rocket & Feta Salad

500g sweet potato
2 cups rocket
100g feta
3 tsp olive oil
2 tsp lemon juice
⅓ cup toasted pepitas
Chilli flakes to top

Preheat the oven to 180 degrees and line a baking tray with baking paper
Chop the sweet potato into equal sized cubes and transfer to the baking tray. Drizzle with salt and pepper and place into the oven to bake for roughly 35 minutes until soft
Allow the sweet potato to cool a little before transferring to a large bowl
To the large bowl, add in the rocket and crumbled feta
Make the dressing by combining the olive oil and lemon juice in a small bowl. Mix well to combine, then drizzle over the salad, gently mixing with your hands
Top with the toasted pepitas and chilli flakes
Tips:
To toast the pepitas, add them to a frying pan with no oil over a high heat. Toss gently to prevent any seeds burning.
