Zucchini, Feta & Parmesan Savoury Muffins

2 eggs
1 large or 2 small zucchini, grated
2 cups of wholemeal self-raising flour
1 brown onion, finely chopped
¼ cup of grated parmesan cheese or ½ cup of grated tasty cheese
1/3 cup of feta
3 tbsp of pumpkin seeds
1 tsp of minced garlic
¾ cup of milk
¼ cup of extra virgin olive oil
1 tbsp of dried italian herbs

Preheat your oven to 180 degrees celsius
Line a 12 hole muffin tray with baking paper or cover with olive oil spray
In a large bowl, combine the flour, dried herbs and salt & pepper
In a separate bowl, whisk together the eggs, milk and oil. Add the minced garlic.
Pour the egg mixture into the flour mixture
Fold through the diced onion, zucchini, feta and parmesan cheese
Place the mixture into your pre prepared muffin tray and top with pumpkin seeds, italian herbs and extra cheese (parmesan or tasty) if you wish
Bake for approximately 35 minutes or until golden on the outside
